Dangerously Delicious Mini Oreo Cheesecakes

Mini Oreo Cheesecakes!

I know that you've been waiting with bated breath for this amazing recipe tutorial.
Don't deny it.

Seriously, these things are RIDICULOUSLY EASY and AMAZINGLY DELICIOUS.
This was my first time ever making cheesecake.
And it was a major success.

Here's what you'll need:
2 packages (8 oz. each) Philidelphia cream cheese, softened
1/2 cup sugar
1/2 tsp. vanilla
2 eggs
12 Oreo cookies
12 paper cupcake liners (or muffin cups, whatever you call them!)
a bit of your favorite fruit (I chose strawberries!)


Preheat the oven to 350 degrees.  Go ahead and place 1 cookie in the bottom of each paper cupcake liner.  I like to prepare the cups before having to pour the batter.


Beat the cream cheese, sugar and vanilla in a large bowl on medium speed until well blended.


Add eggs (one at a time), beating on low speed until blended.  Do not overblend.




Take the batter and fill each paper cup evenly.
Don't judge me on my baby blue and pink liners. I have no idea where they came from!



Bake 20 minutes or until centers are almost set.

The vases are thrifted.  The votive holders are from the wedding.
I am a huge fan of symmetry; the other side of the windowsil mirrors this image.

Guess what?!  Your babies are ready!  Pull the suckers out of the oven and let them cool.
I had put mine in for 18 minutes and they didn't look quite ready to me, but this was the first time around as well.  I set the timer for 2:00 minutes and waited.  Apparently that was too long, because they cracked.  But once they cooled, it was no big deal.  Only for a perfectionist.


Refrigerate for 3 hours or overnight (HAH fat chance!).


After these tasty treats have cooled, grab your garnish of choice.


Slice the strawberries.  I quartered the smaller and halfed the larger.
Just do whatever will fit best on your minis.


And now, top them!
Oh my goodness.  I am getting a craving for these just by looking at the pictures!
Good thing I'm making them again tomorrow for Easter dessert!! :)



I cannot tell you how delicious these cheesecakes are!!
The recipe makes 12.  They didn't last a week.
If you're on a diet or are even watching your calories, this is fair warning.
YOU MAY EAT 3 IN ONE SITTING.
AND THEN GO BACK FOR ANOTHER.
I kid you not. Oh my lanta.
Did I say that I am SO glad that I am making these tomorrow?!


This is a perfect recipe if you're looking for a quick, delicious dessert for any reason.
But it just so happens that Easter Sunday is hours away.

Your family and friends just might love you a little bit more if you share this taste sensation.

There are so many possible toppings to make this a treat after your own heart.  The options are endless!
Personally, I just looooove the way that the tart of the strawberry interacts with the sweet of the Oreo.  Words cannot describe!
